Southern California’s latest newsletter, the Cooks Corner, by husband/wife chefs William and Michelle Bracken (he’s the executive chef and she’s the pastry chef at the Peninsula Hotel in Beverly Hills) is more than just a bunch of recipes. In one issue, the chefs are likely to tell you how to read a food label, where to buy true balsamic vinegar, give you tips on how to cook Arctic char, and throw in some food trivia (one ounce of active dry yeast equals two ounces of fresh compressed yeast).
